The Paisa Way
Fresh coffee cherries, harvested by hand in the mountains of Antioquia, go through a simple but beautiful process -- first, the outer fruit is removed, revealing the raw green bean inside.
In Colombia, there are two harvests each year: the main harvest in late fall, and a smaller one in March. These rhythms, shaped by rain and altitude, give us beans with incredible character.
The notes you smell and taste—caramel, panela, dark chocolate, citrus—come from this land, this process, and the people who’ve perfected it over generations.
